The Agriturismo Malpasso shared with us their recipes of home made marmelades! 

                                    Green tomato jam

Marmellata fatta in casa – Home Made Marmelade

Ingredients:
-1kg washed green tomatoes
-700 g sugar
-1 unwaxed lemon or cider

Procedure:
Wash and chop the tomatoes, finely slice the lemon taking out the white parts underneath the skin.
Pour it all in a large saucepan, add sugar and let it simmer until it reaches the consistency of jam.
Take it off the hob and pour it inside the jars. Once you filled them up, put the jars upside down and let them cool down.
Once cooled, place the jars inside a pan, cover them with water and let them boil for 30 minutes (double sterilization).

Red onion jam

Ingredients:
-850 g red onions (net weight);
-150 ml balsamic vinegar;
-500 g sugar.
Procedure:
chop the onions very finely, add balsamic vinegar into a pan and let it simmer until it evaporates.
Add sugar and simmer until it thickens.
Take it off the hob and pour the content into the jars.
Once the jars are full, place them upside down and let them cool down.
Once cooled, place the jars inside a pan, cover them with water and let them boil for 30 minutes (double sterilization).

Chilli and spicy pepper jam

Marmellata fatta in casa – Home Made Marmelade

Ingredients:
-200g of spicy red peppers (net weight);
-800g red peppers (net weight);
-1 sprinkle of coarse salt;
-half a glass of red wine;
-500g sugar.

Procedure:
Finely chop the peppers (we recommend using gloves for the chillies) and put all the ingredients into a saucepan.
Simmer with a lid on a low heat for about 40 minutes.
Blend it, trying to remove all the pulp from the skin.
Put it back on the hob until you reached the desired consistency.
Take it off the hob and pour the content into the jars.
Once the jars are full, place them upside down and let them cool down.
Once cooled, place the jars inside a pan, cover them with water and let them boil for 30 minutes (double sterilization).

Pumpkin jam

Marmellata fatta in casa – Home Made Marmelade

Ingredients:
-1kg peeled pumpkin;
-750g sugar;
-1 unwaxed lemon.

Procedure:
chop the pumpkin and lemon into thin slices, taking out the white parts underneath the skin.
Put all the ingredients into a bowl, mix them and let them soak overnight in the fridge.
Pour the mixture into a pan and simmer on a low heat until it reaches the right thickness.
Depending on your taste, if you wish to obtain a smoother jam, you can blend the mixture and simmer it for another 5 minutes.
Take it off the hob and pour the content into the jars.

Once the jars are full, place them upside down and let them cool down.
Once cooled, place the jars inside a pan, cover them with water and let them boil for 30 minutes (double sterilization).
